Yummy Roasted Veggie and Chickpea Wrap
One of my favorite meals to order at a restaurant is a wrap. Really, just about any kind of wrap. I also really, really like hummus. Combine the two and bam! Yummiest wrap ever!!
This wrap is great for lunch and will keep you full. It’s filled with roasted veggies and chickpeas. My favorite combination is broccoli and carrots, but I also like it with bell pepper, cauliflower, and broccoli.
But let’s talk about hummus for just a second. I think I’ve tried just about every brand my local grocery store carries and have honestly enjoyed all of them (because I really, really like hummus). But I recently won a giveaway on Instagram from @mindyleetiu and was gifted (among a few other goodies) a box full of Blue Moose of Boulder hummus. I’ve only tried 3 flavors so far: original, chipotle, and lemon turmeric. I loved the chipotle and opted to use it for these wraps, but I’m really enjoying the subtleness of the lemon turmeric! I can’t wait to try the rest of the flavors!!

Yummy Roasted Veggie and Chickpea Wrap
Ingredients
- 1 Whole Grain Wrap
- 1 can Chickpeas, rinsed
- 2 heads Broccoli
- 4 Carrots
- 1 tbsp Hummus, any flavor
Cooking Directions
- Preheat oven to 425F. While the oven preheats, chop the broccoli into bite size pieces.
- Using a vegetable peeler, peel the outer layer of the carrots. Then chop into 1/4 inch slices.
- Combine the olive oil, broccoli, carrots, and chickpeas. Spread onto a lightly greased cookie sheet. Roast for 30 minutes, stirring halfway.
- Spread hummus onto the whole grain wrap. I used smoked chipotle hummus and really felt like the flavor was a perfect combination. Add 1/4 of the veggie mixture.
- Wrap and enjoy! Makes 4.
