Guiltless Peanut Butter Blossoms

Peanut butter makes everything better, am I right? I have always loved peanut butter blossoms, but being aware of the ingredients I didn’t want to make them this Christmas. We go over to my in-laws for Christmas Eve and there are ample traditional treats, so I prefer to bring something a little less indulgent. Don’t get me wrong, I plan on having a little of the less healthy treats as well!!

So when my husband requested them, I of course couldn’t resist! So I decided to give them a healthier twist and, ya’ll, they were husband approved! And that’s really hard to do with “healthy” baked goods! They were super easy to make and I will definitely be bringing them to our Christmas Eve gathering.

Guiltless Peanut Butter Blossoms

Ingredients

  • 1 cup Peanut Butter
  • 1 Egg
  • 1 tsp Vanilla
  • 1/4 cup Almond Flour
  • 1 scoop Peanut Butter Protein Powder (or pbFit would probably work as well)
  • 24 Hershey Kisses

Cooking Directions

  1. Preheat oven to 350F. In a medium bowl mix egg, egg whites and vanilla. Add peanut butter and mix well. Add protein powder and almond flour and mix until everything is incorporated well. Roll into 1 inch balls and place on lightly greased baking dish. Bake for 9 minutes.
  2. Once they are removed from the oven, lightly press the Hershey Kisses on top. If you press too hard they will crumble. Once cooled, transfer to a plate and enjoy!!
