Fluffy Protein Pancakes
I remember going to IHOP as a little kid and getting funny face pancakes. You know, the ones with whipped cream and chocolate chips to form a face. They were so good (at least I remember them that way haha). To this day, I absolutely love pancakes!
I have tried so many "healthy" pancake recipes and while I've enjoyed most of them, they just don't remind me of my childhood pancakes. So, I made it my goal to create a healthy pancake that still tasted just like my childhood pancakes that were likely not so healthy.
Fluffy Protein Pancakes
Ingredients
- 1 cup Oat Flour
- 1 scoop Vanilla Protein Powder
- 1 tsp Baking Powder
- 3/4 cup Unsweetened Vanilla Almond Milk
- 1/2 cup Unsweetened Organic Applesauce
- 1/4 tsp Vanilla Extract
- 1 Egg
- 1/4 tsp Cinnamon
- Pure Maple Syrup
- Blueberries
- Peanut Butter Drizzle
Cooking Directions
- Combine dry ingredients then add wet ingredients to the dry ingredients. Whisk until fully mixed. Using a nonstick pan, add 1/4 cup of pancake batter per pancake. Cook on medium heat. Makes 8 pancakes. Add toppings if desired.
