Chocolate Strawberry Protein Muffins
Ingredients
- 1 1/4 cups Organic Whole Wheat Flour
- 1 scoop Chocolate Protein Powder (I used Klean Athlete Whey Isolate)
- 1/2 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1 tbsp Pure Maple Syrup
- 1/4 cup Unsweetened Organic Applesauce
- 3/4 cup Unsweetened Vanilla Almond Milk
- 1 Egg
- 2/3 cup + extra Diced Strawberries
Cooking Directions
- Preheat oven to 350F. While oven preheats, combine dry ingredients in large bowl and wet ingredients in small bowl, excluding strawberries.
- Slowly add wet ingredients to dry ingredients and mix thoroughly. Add 2/3 cup strawberries and gently fold in.
- Pour into a muffin pan. I prefer a silicone muffin pan. Lightly spray with nonstick spray or use cupcake liners if not using silicone.
- Add a slice of strawberry to the top of each muffin. Place in oven and cook for 20-25 minutes, or until a toothpick comes out clean. Enjoy!!
