Chocolate Strawberry Protein Muffins

Ingredients

  • 1 1/4 cups Organic Whole Wheat Flour
  • 1 scoop Chocolate Protein Powder (I used Klean Athlete Whey Isolate)
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tbsp Pure Maple Syrup
  • 1/4 cup Unsweetened Organic Applesauce
  • 3/4 cup Unsweetened Vanilla Almond Milk
  • 1 Egg
  • 2/3 cup + extra Diced Strawberries

Cooking Directions

  1. Preheat oven to 350F. While oven preheats, combine dry ingredients in large bowl and wet ingredients in small bowl, excluding strawberries.
  2. Slowly add wet ingredients to dry ingredients and mix thoroughly. Add 2/3 cup strawberries and gently fold in.
  3. Pour into a muffin pan. I prefer a silicone muffin pan. Lightly spray with nonstick spray or use cupcake liners if not using silicone.
  4. Add a slice of strawberry to the top of each muffin. Place in oven and cook for 20-25 minutes, or until a toothpick comes out clean. Enjoy!!
