Red, White, and Blue Muffins

I absolutely love July 4th!  Anyone else?!  I love the patriotism, the gatherings, the socializing, and all the fireworks haha!

Every year I always try to figure out what I'm going to take to a July 4th party.  This year I am bringing these delicious red, white, and blue muffins!  These are a healthier twist on traditional blueberry muffins.  Hope you enjoy!

Red, White, and Blue Muffins

Ingredients

  • 1 1/4 cup Oat Flour
  • 1 scoop Vanilla Protein Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tbsp Pure Maple Syrup
  • 1/4 cup Unsweetened Organic Applesauce
  • 3/4 cup Unsweetened Vanilla Almond Milk
  • 1 Egg
  • 1/3 cup Blueberries
  • 1/3 cup Strawberries, chopped

Cooking Directions

  1. Preheat oven to 350°F. While oven preheats, combine dry ingredients in large bowl and wet ingredients in small bowl and mix. Slowly add wet ingredients to dry ingredients and mix thoroughly. Add blueberries and strawberries and gently fold in. Pour into a muffin pan. I prefer a silicone muffin pan - they come out so nice and easy and clean up is a breeze! Place in oven and cook for 20-25 minutes, or until a toothpick comes out clean. Enjoy!!
